A Postdoctoral Research opportunity is available with the U.S. Department of Agriculture (USDA) Agricultural Research Service (ARS) Food Safety and Intervention Technologies Research Unit in Wyndmoor, Pennsylvania.  The project involves basic and applied research on the quality and functionality of pasteurized shell eggs.  The selected applicant will evaluate some or all of the following quality factors and functionality characteristics:  total solids for the albumen, yolk and whole egg; color for both yolks and prepared mayonnaise; shell static compression strength (measured with a texture analyzer); shell dynamic stiffness; albumen height; Haugh unit score; yolk index; vitelline membrane strength; vitelline membrane elasticity; and volumes of prepared angel food cakes and sponge cakes. The quality and functionality of shell eggs during 10 wk of 4°C storage will be determined.  The selected applicant will also develop analytical methods for measuring functionality that minimize issues related to human variability such as occur in whipping tests and mayonnaise preparation. An example of a more objective testing procedure that could be developed would be the use of rheological methods for assessing viscosity and pseudoplasticity.

The appointment is full time for one year and may be renewed upon the recommendation of ARS and the availability of funding.  The stipend rate for this appointment is $61,857.  The participant must show proof of health and medical insurance.  Health insurance may be obtained through ORAU/ORISE.  A travel allowance in the amount of $2,500 is available to reimburse travel related expenses to scientific and professional development activities.  The participant does not become an employee of ARS or ORISE.

While participants will not enter into an employment relationship with ARS, this position requires a pre-employment check and full background investigation.

To be eligible, applicants must have received a doctorate degree in Food Science, Poultry Science, Food Engineering, or a related field within five years of the desired starting date.  Knowledge of Microbiology is desirable.

The selected applicant may provide daily technical assistance to student team members or to support personnel participating in the team effort. The selected applicant will be expected to organize and conduct research, analyze and interpret research data, and report the results via scientific publications and/or technical reports to regulatory agencies and industries.  S/he will be expected to provide annual reports and program reviews, if requested.  Participants cannot serve as mentors or have supervisory responsibilities.
